**Symptom** The operator always uses the compiled-in `DefaultPgbouncerImage` when creating or reconciling a `Pooler`. There is no mechanism to point it at a different container image, unlike the PostgreSQL image which can already be customised via `POSTGRES_IMAGE_NAME`.
